I have just bought a pressure cooker (not even on offer
)
I also have a book of recipes for the pressure cooker which includes one for egg custard. It says to stand the pudding basin on a trivet, but no trivet came with my pressure cooker. Any suggestions? The pressure cooker is a relatively small 3 litre one, and doesn't have variable pressure which is assumed in the recipe book.
Can egg custard be made in the microwave? Need to give DH a treat.
Any help very gratefully received.

I know nothing about pressure cooking but if you google "egg custard" microwave lots of recipes come up.I am the leading lady in the movie of my life

If you don't have a trivet, can you use an upturned metal pie dish or saucer just to keep it off the bottom of the pan?

I might be wrong but I think you could use an upturned saucer in place of a trivet.
And yes, you can make egg custard in a microwave but it requires more eggs than the conventional method. I may be thinking of creme caramel but it's principally the same thing!! HTH:wave:0 -
ive a tin of birds custard powder, eggs, nutmeg and a pack of ready made sweet pastry(i know not very mse). i had originally thought of making jam tarts but wondered if i could make egg custard?

Impossible Pie
1 cup sugar 1/2 cup plain flour
1/4 teaspoon baking powder pinch of salt
2 tablespoons melted butter 2 eggs
1 cup milk 1 cup coconut
1/2 teaspoon vanilla
Mix sugar with flour, baking powder & salt. Add melted butter. Add 2 well beaten eggs and milk. Mix in coconut & vanilla. Pour into greased pie plate and cook in moderate oven for 30 - 35 mins.
NB: The reason it's called Impossible Pie is that when it's cooking it makes it's own pastry layer, it's own egg custard layer & the coconut rises to the top making a topping layer. How clever is that.

I've just made this - I don't think I would bother again. It's very sweet and not a bit like egg custard - but ok.

You can leave out the pastry - you can then make it into creme caramel

I often used to make egg custard without pastry for my children (many moons ago!). Always stood the pyrex dish in a roasting tin with some water in it - not 100% sure why - maybe something to do with indirect heat(?) or keeping steam in the area of the finished dish (?).
Anyway it always went down well with the kids - could make individual ones using old teacups and maybe put some caramelised sugar in the bottom for creme caramels.0 -
