Student DD home from university soon

My DD (19) will be finishing her first year and coming home about the middle of June.
Really looking forward to having her home for awhile and looking after her.
Because she has eaten so much of he stuff - she has sickened herself of rice and pasta and never wants to see it again!
I can't be the only mother in this position so thought we could pool ideas for alternatives.
My DD hates potatoes unless they are fancy mash with veg mixed in so that rules out a few things as well.
Ideas so far are various types of salad- but not pasta or rice!
Curry with home made tortillas instead of rice
Spicy chicken pieces with roast veg
Spanish omelet
Home made soup ( but the weather is getting a bit warm for that)
Home made bread rolls so she can make herself something quick.
Any inspirations gratefully recieved!

I love bean salads - dead easy to do and really tasty.
Just take 3 tins of various sorts of beans, i.e. chick peas, haricot, kidney beans, buttter beans etc. Wash and drain. Empty beans into a big bowl. Finely chop a chilli or two, two cloves of garlic, one green pepper and half an onion and add to the bowl. Add a glug of olive oil, juice of one lime and a splash of balsamic vinager. Give it all a mix up and leave to aromatise for an hour or two in the fridge.
Its great served with pitta bread and houmous.
It has the added advantage of being dead cheap so your daughter can make it for herself when she returns to uni. You can make a big batch and leave it in the fridge for up to 3 days.0 -
Maybe hings like tacos and fajitas, they're easy to do, fairly cheap and it might be something that she cold do at uni too. As someone who graduated last year, I'm only *just* able to put lots of rice and pasta in my meal-plans again lol, I sickened myself with it, especially pasta.0

How about cous cous instead of rice - very quick to cook and easy to flavour.

Home made burgers with trimmings, lettuce , gherkin tomatoes, cheese slice etc, Maybe some coleslaw. Potato wedges? Would she eat spicy wedges with mayo?

How about egg noodles? Lovely with sweet and sour or any other chinese/thai dishes or stir fry.
Quinoa is another option although I have never had it myself so not sure what to do with it. It's probably in the recipe collection.
You could serve naan bread with curry instead of rice.
Not particularly summery but stew with dumplings instead of potatoes.
Bread - tortillas for a variety of wraps, baguettes, paninis, stuffed pitta bread.
Would she eat hash browns/rostis if they are flavoured and have onion in?

I have jotted them down in a notebook so I don't forget.
Might look for the recipe for home made lentil pate that weezl did.
Last time she came home I made the kofta kebabs and split pea curry that won Martin's challenge and she enjoyed that."This site is addictive!"
