Been asked to make up some rolls for a friends wedding reception.
My friend wants open rolls with various topping, but how do i make them look nice, I have some nice oval platter plates.

Lots of circles of different colours, or keep them grouped together in little themes. Make them look a bit like petals of a flower? You really should go for tiny rolls to have the full effect and make sure the colours of the food are nice and bright. Forget tuna, it smells and doesn't look nice!
Chuck some watercress round the outside of the platter.
Go for cheese and tomato (red and yellow)
Egg mayo and cress (green and yellow)
Ham (pink)
Beef (Brown- eugh)
Cheese and cucumber etc etc

In sweden we serve sandwiches open to show the decoration. I've tried to google pictures to show you. I can only find smörgåstårta = Sandwich cakes but it might give you some ideas in how to display the rolls

Rolled up ham, tomato wedges, rolled up cheese, egg cut into wedges and lettuce
Rolled up Salmon on cream cheese, dill, lettuce and sliced lemon.
Prawns, sliced egg, lettuce, cottage cheese and sliced lemon.

You could alternate brown and white roll bases for a sort of chequerboard effect with different toppings as mentioned above.
If I was making them I'd stick to a couple of toppings, maybe egg & cress, ham & tomato, cheese & cucumber and add lots of watercress around the edge with some tomato wedges. Could also add some sprinkled chives onto toppings for decoration.

well made loads of platters of open rolls,
with watercress around the edge of the platter, in the middle had stainless steel balti bowls full of cherry tomatoes, salad etc really pleasedwith the effect0 -
