Stuffed Aubergines
INGREDIENTS:
2 tablespoons olive oil
2 medium aubergines, cut in half lengthwise and hollowed out to 1/4 inch flesh rim
1/2 cup chopped onion
2 cloves garlic, crushed
1 teaspoon dried oregano
freshly ground black pepper to taste
1/4 cup grated Parmesan cheese
1/2 cup bread crumbs
1 teaspoon chopped fresh Italian parsley
2 cups tomato sauce
1 cup shredded mozzarella cheese
DIRECTIONS:
Preheat oven to 165 degrees.
Heat olive oil in a large pan over medium high heat. Roughly chop aubergine centres, and add to pan with onion, garlic, oregano, and pepper. Cook and stir until lightly browned. Spoon mixture back into aubergine, and sprinkle each with parmesan, bread crumbs, and parsley. Place in a shallow baking dish, and cover with tomato sauce and mozzarella cheese.
Bake in the preheated oven for 30 minutes, or until aubergine is fork-tender and cheese is bubbly. Serve immediately.Anna :beer:0 -

How about Chickpea patties?
Drain a can of chickpeas and mash. Mix with 1 finely chopped onion and couple mushrooms. Stir in a good shake of mixed herbs and handful of breadcrumbs. Season with garlic, pepper, sauce, whatever you like. Add a beaten egg to bind and shape into patties and grill. If you have a food processor, just throw everything in and it only takes seconds to make. You can also add red/green peppers or carrots too finely chopped, and coriander is nice mixed in if you like that.

A favourite standby for us (my OH is veggie so our evening meals tend to be) is what we have nicknamed "pile-ups". Basically just a toasted sandwich but done in tinfoil in the oven, usually with oven chips. We call them pile-ups as we usually have a pile of them all cooked together.
They are very handy when we have a glut of either bread, onion, tomatoes, cheese or sometimes most of those - in fact we're having them tonight due to bread surplus and 10p (reduced) punnet of cherry toms, plus half an onion wanting using up.
Just make a butty with the sliced onion and toms and grated cheese, wrap in tinfoil and cook in oven for about 30 mins. Nice with either salad or coleslaw.I haven't bogged off yet, and I ain't no babe
