Going crazy here after reading all these great tips!
Took dog out last weekend and picked 5/6 1bs blackberrys and make apple and blackberry jelly, (about 8 1bs). This weekend our market has a stall which sells off some of his fruit/veg and was selling small punnets of strawberries 5 for 50p! Bought 12 (5-6 lbs) and make strawberry jam.
Now looking for some cheap lemons/oranges cos I've an easy recipie for lemon curd (microwaved - but good!) OH just loves orange curd - he would eat it out of the jar with a spoon if I let him!
3 oz butter
8 iz caster sugar
rind/juce 2 lemons
3 eggs - beated and sieved.
Cut butter into small piece and melt on high. Stir in remaining ingredients and cook on high for 2 1/2 - 3 mins stiring 2-3 times till sugar is dissolved. Continue cooking on high till mixture thickens. Leave to cook then pot.
This makes 1 1b. (I've doubled it and it still was ok)
