Remortgaging with current lender & decreased income

This is probably a basic question so please forgive me! Our fixed rate is ending next February (boo hoo) and I will most likely be at uni doing my PGCE. As such we will only have DH income of about £32,000 and an outstanding mortgage balance of about £148k. I am not sure if my bursary income will count as income - it is £9k over the length of the course but obviously is not a permanent income. There are a couple of other complicating factors:

1. DH is in a salary sacrifice scheme for childcare vouchers so effectively his salary is less than £32000 and I know some lenders will only consider the sacrificed amount rather than his notational salary.

2. DH has a few benefits in kind like company car and fuel benefit. Would any lenders count these as income?

I'm thinking we should stay with our current lender (Co-op) if they do not have to underwrite us again. They don't have the best deals at the moment but surely it would be better to go onto their tracker than to stay at the standard variable rate when our product ends. Hopefully I'll have a job come next September and we could move on to a better deal with another lender if necessary?

So I'm mainly asking if I am correct in thinking our current lender won't ask for proof of income if we remortgage with them...
