Cooking and freezing chicken

I'm going to cook a chicken, and then strip the carcase so I can freeze the meat for use in salad pots (etc). Is it there anything I need to do to keep the meat in as near to 'just cooked' condition as possible?

i'd just carve the chuck as normal when its cold, and put a portion of chicken per plastic food bag, so you only have to defrost one meal at a time. then just defrost as normal, and it'll be fine0 -
get as much air out of the bag before you seal and freeze it, and defrost in the sealed bag - helps it not dry out as much.0
