moroccan stew?

Hiya
trying to be healthy while using up some storecupboard bits and bobs.
I have a tin of chickpeas, some spinach and cous cous and fancied a bit of a moroccan type stew. I can add tinned tomatoes and have lots of spices and herbs as well as lemons. but i'm not sure what i should bung in - can anyone give me a push in the right direction???

Google Moroccan stew and loads of delish ones come up. I made 1 last week from the site Good luckTry and do a good deed every day.0

r.mac - You could simply start by sweating an onion and some garlic and add some typical moroccan spices (e.g. cinnamon, cloves, cumin, coriander, nutmeg and chili or cayenne if you like it hot). If you have any carrots, add some of those as well and cook till softened. Add the tinned tomatoes and drained chick peas, and also something sweet such as dried apricots or raisins/sultanas. Simmer it all together for a bit and add the spinach last. Serve with couscous. Note: you can add other veggies you have lying around and need using up such as courgettes, red/green pepper etc."Remember that many of the things you have now you could once only dream of" - Epicurus0

have a couple of carrots and a corgette I will throw in also have sultanas and may throw in a handful of those too.
