Fruit Muffin Recipe

Does anyone have a healthy fruit muffin recipe that's easy to follow please?

    I have this one that I made with my daughter, and they're delicious.

    2 cups 300g self-raising flour
    1 teaspoon mixed spice
    1/2 cup (100g) firmly packed brown sugar
    1/2 cup (80g) sultanas
    1 cup (250ml) milk
    125g butter, melted
    1 egg, beaten lightly.

    Grease three 12-hole small (2 tbsp/40ml capacity) muffin pans. Combine flour, spice, sugar and sultanas in large bowl. Stir in milk, butter and egg; do not overmix (batter should be coarse and slightly lumpy). Divide mixture among pan holes; bake muffins in moderately hot oven* for about 15 minutes or until browned.

    Makes 36. Freezing suitable.

    These make the mini muffins as I got the recipe in a book for kids (women's weekly good food for babies and toddlers) but you could make them in normal sized muffin tins, just increase the cooking time appropriately.

    *A moderately hot oven is 200' or gas mark 6

    Thx for that, I'm going to be making 6 large ones, so will the ingredient quantites be the same?
