    My mum is a BBQ phobic too - she hates all the hassle and mess and always has visions of red raw sausages with a burnt outside. I don't mind them but not fussed really. Prawns are a !!!!!! when you have to shell them afterwards (not worth the hassle) - same with trout (fab taste but skin and bones just isn't worth it.). I'm afraid I would BBQ something simple like sausage or burgers (slowly over hot coals - not over raging fire!) and make something else in the kitchen to go with it!

    Corn on the cob however is FAB on the BBQ - very sweet! :grin:

    Oh prawns and baked spuds yummy! How did I forget those. We've just invested in a gas BBQ which we used for the first time at the weekend, ok it's cheating but sooooo much quicker!
    One day I might be more organised...........:confused:

    Dead easy to make cheap marinades for most of your BBQ foods;

    1. - Chicken marinade; 4 breasts of chicken. 1 tablespoon olive oil. 1 tablespoon of soy sauce. Fine chopped clove of garlic. Pinch each of chile flakes, cumin powder, chinese five spice, and curry powder. Mix together. add chicken breasts. Leave in fridge overnight or 4 hours.

    Wonderful bbq chicken.

    2. - Rib BBq; Ribs. 4 Tablespoon of tomato ketchup, sprinkle of brown sugar, 1/2 teaspoon of honey, dash of worcester sauce, fine chopped clove of garlic.

    Rub all over ribs. Plastic bag them and in fridge overnight or 4 hours

    3. - Chicken legs on BBQ; Part boil them first to stop the horrible blackening that takes place on raw chicken. Then immediately after part boiling them;

    Sprinkle with cajun spice (from supermarket) rub in vigorously, salt and pepper and finish cooking on BBQ. It makes them crinkly and not black as coal.

    4. - Kebabs. Buy some kebab skewers, wood are cheapest but remember they need to be soaked.
    Cube some chicken, or turkey or pork. Cube an onion. Slice a red and green pepper. (can add pineapple if this is a favourite)

    Soak the cubed meat in any of the above marinades and then cook direct on the BBQ.

    If you dont have the skills, time or energy to make the marinades, then buy a cheap jar of curry paste or chile paste from the shops and soak the meat in them.

    NB; sea food doesnt BBQ well it either burns or is under cooked with tummy ache thrown in!

  • Was veggie for a long time and this is one of my faves (and very popular with everybody else, meat-eaters too!) I think it's from Ainsley Harriot (?)

    In a big bowl mix:
    finely chopped toms and onions, chopped chilli to taste, toasted pine nuts, fresh coriander, salt, pepper and loads of grated cheddar.

    Spoon blobs of the mix onto soft flour tortillas, wrap up the tortilla, wrap the tortillas in foil and stick on the barbecue.
    They don't need much time - just for the cheese to melt and ingredients to blend a bit.

    I do fairly thin chicken breasts and my marinade is oil, honey (although if we've run out I have been known to use maple or golden syrup), Chinese five spice and soy sauce, bung it in the fridge for at least an hour but longer is fine then cook on BBQ - mmmm my favourite.

    Then we do veggie kebabs - mushrooms, peppers, courgettes (sometimes onions but I find them a bit fiddly) - toss in oil with garlic granules/fresh garlic thread on kebab sticks. These are popular with veggies and meat eaters alike.

    I don't like sausages and burgers much so we might well just do this with some jacket pots, couscous salad, green salad h/m coleslaw etc.

    We also always do marshmallows, we have them first as they cook better (toasty and crisp on outside and falling off the skewer with gooeyness in the middle) over a slightly flaming BBQ.

    If we are feeling really indulgent we do bananas -skinned and sliced in foil with dark chocolate, marshmallows and a spoonful of brandy - cooked for a few minutes and served with ice cream. YUMMMY.

    I've done this for years (even cook the sausages and burgers in the oven (on a lowish heat so they cook but don't colour). Only tend to cook "raw" ingredients that are really thin (bacon etc) that can be blizted safely. I'm paranoid about food poisoning so I have to know it'll be safe before I can serve it!

    I don't like BBQs
    BUT give me an open wood fire as at Guide Camp and I'm there!!!
    Will cook anything over a wood fire.... even made a brick oven..
    but lava coals and gas coals... no!

    The BBQs we go to we have to take our own burgers and buns and our own beer. :rolleyes::eek:
