Quick & Cheap Vegan Sauces (Baking)

Evening all.

I have just made a vegan dinner which was yummy - fried a block of tofu (cut in half) which was rubbed in ground black pepper & salt until it was golden brown all over. Served with chopped tomatoes and mushrooms which were just cooked in a lidded saucepan with a little water & basil for a while until tender.

I made a simple sauce for the tofu 'steak' which was: warm up a quarter of a pint of soya milk, add a knob of vegan margarine and a little bit of mustard and thicken with a little flour. My fiancé loved it and because the tofu was on offer at Tesco, it was all pretty cheap - hurrah!

However I got to thinking how nice it would be if I could bake the tofu in a nice vegan sauce, maybe something like a home made mushroom sauce, made with soya milk or cream.

Is there anyone out there who knows if you can use soya milk or cream in a baked sauce? Or if they have any quick & cheap recipes? I assume it's ok, but, because the sauce would be in the oven for a while and a very high temperature I wasn't sure if the soya products would curdle or anything like that.

    I make all of the white sauces to top lasagnes and mousakkas with soy milk and they don't seen to come to any harm. I regularly freeze them as well and they are still OK

  • Another here who uses soya milk in white sauces ;)

    Not tried in oven though

    I do a thick cream of mushroom soup - using soya milk and often bake it in potato bake.
