using up chorizo and smoked pancetta slices?

any tips on using up slightly out of date chroizo sausages ( sliced into disc slivers in the food processor) and packet of smoked pancetta slices?

do they freeze?

So far I've add some some chorizo discs to cheesey creamy pot and caulifower bake.

I've got 1/2 a p ack of feta in the freezer so will try a variant of this ( pot, chorizo, feta omlette).

any recoomendations much appreciated ! :)

    "Meat Feast" pizza? Pancetta wrapped feta stuffed chicken breast? Actually, reading that back it would be too salty - slit a chicken breast and stuff with stuff with garlic cream cheese instead, or grated cheddar, garlic and parsley, before wrapping in pancetta.

    I would have thought you could freeze - I freeze bacon, smoked bacon and sausages without any ill effects - freeze in the amounts you would use as a portion - I regularly split bacon rashers or sausages bought RTC into pairs, cling wrap then bag, so it is easy to get out the correct amount for one (or multiple) bacon /sausage sandwiches. Important to defrost just what you need when food is "on date."

    I made a really nice risotto with peas and chorizo and onion. I didn't have arborio rice so just used cheapy long grain! I thought it was nice tho.;)

    I have added chorizo to a HM minestrone soup:

    Break up some spaghetti into a saucepan
    Add a pint of chicken stock
    Add a tin of chopped tomatoes
    Add a chopped onion, carrot, french beans, celery
    Add a tin of borlotti beans (or soak some and boil as necessary)
    Chopped garlic
    Oregano

    Allow to bubble away until the spaghetti is cooked and the soup is slightly reduced.

    I also use to top pizzas and add to a HM tomato pasta sauce.

    The smoked pancetta slices, I would use to wrap chicken or turkey breasts stuffed with garlic and herb cream cheese (or your feta). Bake in oven for 20 minutes or until cooked through.

    Just fry up the meat (cubed/diced/sliced) and add to cooked pasta. Chuck in any vegetables you have and then add anything else you like - garlic, chilli, tomato paste, onion.

    You could do a proper Italian pasta carbonara (not the Anglo-American version with cream & mushrooms) with the pancetta.
    The acquisition of wealth is no longer the driving force in my life. :)

    Found (and have done this several times) on the Jamie £5 contest thread:

    Main course - Chorizo pasta

    1 pack of chorizo - 91p
    1 pack spaghetti - 23p (value)
    1 tablespoon lemon juice
    1 tablespoon balsamic vinegar - store cupboard guess 20p all 3
    1 tablespoon olive oil
    Total - £1.34

    Cook the spaghetti. Fry the chorizo in the oil, lemon juice and vinegar. Mix with the spaghetti and serve.

    It's not mine, so many thanks to original poster. Yum!
