Do you think I would have to parboil it or something first?

Could you perhaps give it a bit of a blast in the microwave just to soften it a bit?? I often cook them like that, in the skin and eat them like a baked potato. Mmmmmmm chargrilled butternut squash sounds delish!!!!!!!

Cut it in half length ways (leave the skin on) - wrap it in tin foil and put it on the BBQ or even in the coals! It's delish! Cooking it with other food is that it will cook slower than meat. It would be better cooked on it's own for much longer. A lovely way of serving cooked butternut especially whole is to scope out the seeds and replace them sweetcorn and cheese.

How long does butternut squash keep once it's cooked? Just remembered I roasted one the other day whilst doing something else and it's been sat in the fridge since! Forgot all about it until I saw this thread :o
