what is the quickest easiest and cheapest way to pay for the redemption of a mortgage coming to an end? Is it by paying the building society to do the legal costs or by employing our own legal people?

I think you've had no answers as you're question is a bit ambiguous, do you mean you are paying the mortgage off? If you are just repaying it I don't think there are any legals required...."You've been reading SOS when it's just your clock reading 5:05 "0

If you are paying off the mortgage in full from the proceeds of the endowment policy(ies) then as Sammyjammy says, you don't need to employ a solicitor.
Contact your lender to find out how much is outstanding and send them a cheque for this amount.
If it's a High Street lender you could just go into the branch to get the figures and pay it off.0
