Pannini and ciabatta

Picked up some pannini and ciabatta at Asda when they were on offer as they looked really yummy.
Never had them before and now I don't know what to do with them
Any ideas for veggie ones for me and anything for hubby :rotfl:

Pesto and mozzarella is lovely for a veggie pannini! You could also add some mushrooms, peppers or onions. Yummy!0

similar treat them as bases for a quick pizza but do "cook" them in the oven the bread will go nice and crispy, add your tomato base and do your own toppings

OH loves tuna melt paninis - tuna mayo with cheese and olives. I don't have a panini press so what I normally do it toast the panini, split it and fill it and then nuke it until the cheese melts, they're tasty and far, far cheaper than the coffee shop equivalents.
Tomato and mozzarella (the buffala stuff in the packets with the brine) is also good, and would make a nice filling for either the the panini or the ciabatta. Just slice a nice ripe tomato (beef for choice) and some mozzarella, then lay it onto the bread. Top with a drizzled of olive oil, some fresh ground black pepper and some fresh basil, if you've got any. This is also a really yummy topping for lightly toasted ciabatta, when the bread is nice and warm. Or you can slice the ciabatta, toast it and top with a mixture of chopped ripe tomatoes, olive oil, black pepper and garlic for homemade bruschetta.0 -
I use ciabatta cut in half for quick pizza bases. I spread passata and bit of tomato puree onto cooked bread , sprinkle bit of dried herbs, add toppings, top with mozzarella and cook. Yum yum!:wave: If you want the rainbow, you've got to put up with the rain :wave:0

Can I cut the ciabatta or pannini in half, spread with tomato paste, put veggies and cheese on. Or do I have to toast whole or in half first before adding bits and pieces?
Then do I cook it? Under grill? In George Foreman? to cook the veggies. Or should I saute the pepper/onions etc first?
So sorry for basic questions. I'm sure I'll love 'em when I do 'em

I had a lovely one from Cafe Nero when I was out with Mum last week. It was Thinly sliced tomato, fresh basil leaves and mozzarella. Scrummy yummy !0 -
hiya, you wil need to cook the veggies first, maybe oven roast them with a drizzle of olive oil and a drizzle of balsamic vinegar. Once they're cooked you've cooked them up slice the panini or ciabatta in half and spread with some pesto a thin layer of mozzerella and then a layer of the roasted veg. Then put the top back on the panini, you can then just lightly brush the outside with some olive oil,(you don't have to do this but it does make them taste better and crisp up nicer) and then just pop it into your panini grill or a George Foreman will do exactly the same thing....enjoy!

I usually just make them like a normal sandwich, but without butter/marg & then slap them on the pre-heated George for 4-5 minutesThanks everyone.

personally, I'd saute, or grill on the George*
things like onion & peppers
*cut veg to size you like, toss in a little oil in a bowl & grill till done to taste
just experiment & enjoy
