this thread has been interesting for me to read as i have similar issues with my bread.... my hubby actually likes ' claggy bread' as he puts it lol and even tho he says that as a compliment.. im not sure i take it as such! Especially , when my mum who has been making bread since the year dot and it is officially the best in the world.....makes the most beautiful light ( but still with body),tasty bread....i have asked and asked what i am doing wrong,,,,ohh its just experience she tells me! grrrrr no help! so i am going to double rise my next lot and give a good 90 mins if needed.. one question.. i have heard my mum talk about loaves she has done in the past where they have over proved..and lost some of the texture..anyone else had this as i dont want to go the other way with my bread.

Woohoo! I've had a breakthrough with dd3, she who hated and moaned about my hm bread, she actually asked for some yesterday! And told me that she loved it! And even better she actually ate it and there was no scrunched up face! I have no idea what changed her mind, other than the fact that there is no other choice but hm stuff, and that I have finally worn her down!

My OH has taken to making this bread from a baking supplement in the Guardian last year. It's absolutely gorgeous although a bit more of a faff as you have to start it the night before.

Over proving - is that leaving them to rise for too long? Maybe thats whats wrong with my buns? I often leave them for a couple of hours whilst i get on with other things - i didint think they'd mind!
