A use for 1 x batch of rice noodles in a vegan meal for 2??

Hello everyone. Fancy a challenge!?? 
I am going to be planning the coming week's menu in the next 24 hours, and I've just looked in the cupboard to see what we have.
I have found a packet of rice noodles from a couple of weeks ago - you know the ones where you get 4 bundles within a pack - and only one 'bundle' is left. So there are not quite enough to do a stir fry for two people.
I have used Google for some ideas but get a lot of miso soup coming up or meaty ideas. We're both veggie (he's more or less vegan) and I don't fancy miso soup.
Has anyone got any quick & cheap ideas for a vegan soup or anything else...?

Not very original or inspiring, I'm afraid, but could you not just make a simple vegetable soup and cut the noodles into shorter pieces and add them so that its a little like a minestrone soup?

How about making a Vietnamese style salad - cook the noodles then cool them under running water, then mix with julienned carrot/red pepper/spring onion, plenty of shredded iceberg and tofu. Make a dressing with a little soy sauce, sesame oil and lime juice and toss through, then top with some chopped mint & basil and chopped peanuts. If you don't have a lot of noodles, just increase the amount of veggies!2015 comp wins - £370.25

How about a coconut based soup? - I use a tin of coconut milk diluted with vegstock (same amount). Stir fry onions, peppers, mushrooms and carrots strips and sesame seeds, cook noodles and drop all of them them in the liquid. Season with chilli and soy sauce.
