I've been vegan for a couple of years now & find it really easy except when we eat out.
I think the key to making it easy is to plan your meals for the week in advance & bulk cook everything you possibly can.
Make big batches of lentil bolognese, dahl, chickpea curries, chilli, veggie casseroles etc etc & you've always got a meal in the freezer ready to defrost for a quick dinner. Stirfry with cashews is another favourite of mine, homemade pizza with a really tasty tomato & olive topping (no need for cheese but you can use the pretending mozarella if you like) & I love a big salad with a jacket potato filled with houmous.
There's such a variety of beans, pulses & nuts there's no need for your meals to get monotonous but beans take preparation (I prefer dried to tinned).
I buy bags of dried beans & soak & cook them all then freeze in portion sized bags. They're then just as convenient as a tin, cheaper & (I think) nicer.
One of my favourite things for lunch is simply good old beans on toast but I also love a slice of toast spread with Houmous & topped with fried mushrooms & tomatoes.
If you want a nice spread for your bread the Pure soy margerine is really nice & is vegan. Also if you want a 'meaty' taste to your gravy original Bisto powder (not granules) is vegan.
The parsleysoup recipe site as recommended by floyd is one of my favourites but there's loads of stuff out there if you google vegan.
Good luck with this. I've never felt so well as I have since I changed my diet.0
