Ideas for a mountain of sweet potatoes & spinach?

Very odd combination in the veg box this week!
Also have lots of carrots, broccoli and the usual onions, mushrooms etc. Can add most fish, chicken or turkey, and possibly pork or steak (note to self - must inventory the freezer!)

I use spinach as a base layer in my fish pie, just make sure you squeeze all the moisture out first after you cook it or it makes your pie watery (750g precooked weight will do a fish pie for 4 in my house). Other thank that, in quiches, savoury muffins or just as a side dish (with garlic thrown in is really nice).
I lurve sweet potato and use half sweet half white potato for sheperds pie topping or cubed and roasted is nice as is baked.0 -
How about mashing the sweet potato with some regular spuds and making potato cakes?
2 cups mash, 1 beaten egg, diced veggies, seasoning. Mix well, shape into patties, fry in saucepan.

Sweet potato & bacon casserole:
Scrub the sweet potatoes, but don't peel them and leave whole. Place in a pot with enough water to cover, bring to the boil and boil till barely tender (about 30 mins). Drain, and when cool enough to handle, peel and cut into 1cm thick slices.
Butter a casserole dish, and layer the sweet potatoes with sliced cooking apple. Sprinkle over 1 chopped onion, then top the casserole with rashers of bacon (I think back bacon works best). Glaze the bacon with 1 tsp dijon mustard, sprinkle over 1 tbsp brown sugar and dot with butter. Bake at 180c until piping hot, about 30 minutes.2015 comp wins - £370.25

I use sweet potato mashed on top of my shepherds pies instead of normal potato (also put spinach in my shepherds pie as the kids don't spot it as easily!!
Also sweet potatoes make nice potato wedges!Back Comping after a 2yr break! :j0 -

My O/H ordered an unusual (to us) starter in a traditional Catalan restaurant in Barcelona last week.
It was essentially a big plate of cooked spinach, with pine nuts, some kind of ham or bacon in small pieces, and sultanas. Very buttery... really nice.My TV is broken!

Made this the other day with some sweet potatoes which had been languishing in the bottom of the veg drawer for far too long. Really nice soup. Even DD1 who would have turned her nose up at the sweet potatoes in a more recognisable state liked this.
1kg (orange) sweet potatoes
1.2 litres of boiling water/stock
S&P to taste
400g tin of white beans (cannelini etc)
1tsp decent curry powder or more to taste
Peel and cube the sweet potatoes
Put into pan and add boiling water/stock plus the salt and pepper, then bring to the boil.
Simmer for about 15 minutes or until soft.
Drain and rinse the beans. Add about half to the pan, plus the curry powder and stir well.
Zizz with a hand blender, or in batches in a food processor. Back in the pan, add the remaining beans (or omit if you prefer a smooth soup) and reheat gently. If too thick, add more boiling water. Add more salt/pepper/curry powder if required to suit your taste.
You can add a sprinkling of chopped fresh parsley or coriander on top when serving if you wish - looks very posh.
Dead easy and quick to make, and really tasty.0
