Anyone any good at figuring out recipes?

Hope I won't get into trouble for this...
There's a scrummy vegetarian 'roast' thingy that I have just discovered and fallen in love with.
I'd love to have a go at making it myself.
The ingredients are:
Lentils (33%), Carrots (27%), Onions (11%),Apples (7%), Groats (4%), Cheese (4%), Mushrooms (3.5%), Oatmeal, Oatflakes, Hazelnuts (1%), Seasalt, Cider Vinegar, Sugar, Cider, Pepper, Garlic Powder, Thyme, Sage
Does anyone have any tips as to how I should go about trying to make my own version?
Do I simply do some maths and chuck it all together? Or is there a method to deciphering recipes?

Personally I would try using the percentages as part of 100g to make it simple maths to negin. Then see what sort of quantities you end up with and multiply up or down accordingly. It doesn't add up to 100% so I guess the seasonings at the end need to be 4.5%, which seems a bit high at first glance, but then this is where the liquid is, so the 4.5% is seasoned liquid.
I've seen recipes written like this, often to help when/if you don't have scales or measuring equipment. It splits the recipe into 100 parts, could be cups, teaspoons, or whatever. I'd round it, so 30 parts lentils, 30 parts carrots, 10 part onion & etc.
To make up to the 100, I'd do a mix of cider and cider vinegar to taste, to the full 4 parts, then season with the other stuff, again to taste. And now I'm not convinced that's enough liquid?

Do you think tht sound enough liquid? I'm not sure what it is and what the consistency is but I would say with the oats and lentils it would be about right?0 -

I would guess at frying the onions, mushrooms, garlic; then add the other stuff, then add lentils and liquid last?
