Healthy supper for £15

Posted this on Anyhting else moneysaving but it was suggested I posted here for more replies.

I am involved with a group at work to promote healthy living. We all have different things to do. My part is to provide a healthy supper for us at the staff meeting on Monday evening. The total budget I have is £15 and that is to feed 18 people. It has to be healthy.

I have no idea what I can make, so am looking for any suggestions. I am not much of a cook so need easy ideas and simple recipes.

    What sort of cooking facilities have you got access to - will you be cooking there or is it a case of make it at home and heat it up there? Or does it need to be cold?

    I was thinking maybe you could do some kind of curry, like a lentil/spinach dahl and spiced rice. You could serve a spicy chickpea dish with that as well - pulses are much cheaper than meat, and it'd be fairly low fat/high fibre. Obviously if you've got to buy all of the spices it'd come in over budget, but if you've got the basics at home (garam masala, turmeric etc) then you could use those ... unless that's cheating? If you're interested just say and I'll pm you the dahl recipe.

    Dessert is harder but a fruit platter is always nice - you could see what's cheap at Lidl/Aldi/Tesco and make something up from that, things like melon slices, orange slices, grapes, kiwi ...

    I have access to a kitchen at work so it is not a problem cooking there.

    I have to say that for something like that I would go for the old spag bol or chilli and padd it out with veggies and porridge oats.
    Serve it with a nice trifle (if there is such a thing) and you should come in under budget.
    You could also do a huge fish pie with veggies- anything really.

    I would go for soup and a healthy fruity pud. Minestrone wouldn't cost much and it can be vegetarian - probably sensible? HM foccaccia bread with it? A bowl of grated parmesan for people to add themselves. For pudding, a big platter: fresh fruit, dried fruit, yoghurt with a little honey in it for dipping, maybe a chocolate dipping sauce in small quantities. Some caramelised nuts would be another nice touch.

    Hiya, for pudding can i suggest a recipe that i used when i did slimming world?

    Its like a layered jelly terrine dish.

    This makes enough for 6-8 people but you could multiply up:

    2 sachets sugar free jelly (Strawberry or raspberry is nice)
    250 ml low fat natural yoghurt
    quarter to half a bag of frozen mixed berries.

    Method:
    put the frozen fruits in the bottom of a 2 pint loaf tin (or whatever dish you want to use)
    make up one sachet of the jelly as normal and pour it onto the fruits. put it into the fridge to set.
    when the first layer is mostly set, make up the second sachet of jelly with just under half a pint of hot water. Let it cool until only luke warm.
    mix the yoghurt into the third pint of jelly (instead of adding old water)- it will go a bright pink colour!
    When the first layer has fully set, pour the yoghurt -jelly mixture on top.
    put it into the fridge to set.

    Turn it out and slice to serve.

    it sounds a bit wierd, but this is a nice dessert with very low fat and sugar. my friends like it and its very easy, healthy and cheap, though it does take a lttle while to go through the steps as you have to leave it to set inbetween.
