Veg Curry?

This might sound a bit of a daft question but what sort of vegetables would you use in a vegetable curry? I don't get paid til Thursday so I'm trying to use up what I have in my cupboards and freezer til then, I have a curry sauce in the cupboard but no meat so was going to try a veg one? I have the following:
Potatoes
Parsnips
Carrots
Leeks
Onions
1 Courgette
Half an Aubergine
A few mushrooms
Frozen Green Beans
Frozen Broad Beans
Are there any of these that I definitely should NOT put in? (Wasn't sure if parsnip or frozen broad beans would really work???)

I think all of those would curry well, at the end of the day what you put in is down to what you think would taste nice together. If you are putting frozen beans in try not to add chunks of ice as well.0

I cook my potatoes, carrots & parsnips first before adding them to the curry sauce (the other stuff will cook in 20-30 mins in the sauce).
Have you got a tin of sweetcorn or any frozen peas knocking around you could use?
I've never used aubergines so i don't know about them, but someone else will soon be along to help you.0 -

You can curry all of those vegetables, but I'd save the potatoes for baking to make another easy inexpensive meal later in the week.0

i usually use peppers, brocolli, onions, carrots, mushrooms, frozen peas and frozen sweetcorn (i will use courgetts if the are cheap enough) but find the mix does not suffer from using other things that need using up or are on offer instead - i try to use mixed peppers for colour!!Dogs return to eat their vomit, just as fools repeat their foolishness. i usually add some lentils (if i have any in the cupboard) to bulk it out, and also thickens it up nicely.Of all the things I've lost, I miss my mind the most.....0

Just eaten my veg curry, it was lovely! I used onions, leeks, courgette, green beans, potato and parsnip. And I've still got some potatoes left to bake for later in the week!0
