bananas, dates and walnuts

hi all,

Banana, date and walnut loaf off the top of my head...
150g chopped dried pitted dates
200g brown sugar
250ml water
320g wholemeal self-raising flour (or take out 100g of white flour and replace with bran, which will make the recipe a bit denser)
260g mashed ripe banana
55g chopped walnut halves
1/2 tsp bicarbonate of soda
Combine dates, sugar and water in a saucepan over low heat. Cook, stirring, for 2 minutes or until sugar dissolves. Increase heat to medium and bring to the boil. Remove from heat.
Add flour, banana, walnuts and bicarbonate of soda and stir until combined. Spoon into prepared pan and smooth surface with the back of the spoon. Bake in greased loaf tin in a pre-heated oven at 180 for 40 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside for 5 minutes to cool before turning onto a wire rack. Serve warm or at room temperature.

Thanks for that magpye but could i use just the white flour only ? as have none of the other. x0

banancake
3 ripe bananas
300g self raising flour
150g butter or good marge
150g brown sugar
2eggs
80 sultanas ( can be swapped for dates and walnuts mixed)
2tsp lemon juice
2 tsp olive oil
mash bananas first then add all ingredients, mine makes 2 loaves in bun tins.
i always line mine with greaseproof paper

I'm pretty sure you could use all white flour for that recipe of mine too - I just like bran in mine (huge jar of bran in the cupboard - maybe I'm just strange
)
