hi everyone,
OH has bought 3 packs of fine green beans and they are rapidly losing the will to live in the bottom of the fridge (as am I at the thought of eating them - i don't like them really :embarasse ).
Any ideas what i can do with them to make them vaguely palatable?!
I have some vague recollection of a french bean salad but don't what the recipe / /method is. :undecided
Any tips gratefully received!

my lot eat them with a homemade cheese sauce poured over them nice with fish.
or i add them to an omelette or more like a thick spanish omellete if you know what i mean with potato and onionStill TryingGrocery challenge July 2016

not very healthy, but you can batter them in seasoned batter and deep fry them.
they used to do them in TGI Fridays restaurants like that, kind of southern fried beans, yummy they were
Not sure what spices you would need to put in the batter though to make it southern fried taste, experiment I guess! lol0 -

I chop them up and chuck them in rice, you can ad them about 8 mins before the rice is ready and strain together.0 -

I grow fine green beans and one of our favourite applications is using them in Salade Niçoise - a French salad indeed.
It is simply a layered salad, which in my version is a complete meal: start with some slices of cold boiled potato, next sliced cucumber, on top of that a good quantity of the green beans, cooked 'al dente'. Then follows the contents of a tin of tuna, flaked, and on top of that some chunks or slices of nice ripe tomato. Season with salt & pepper and a crushed or minced clove of garlic. After that - if you like this - some anchovy fillets, and finally quarters of boiled egg and pour an oil & vinegar dressing over the salad. Leave in the fridge for at least 30 minutes before serving.
Of course you can leave certain elements out according to what you have in stock. The 'must-haves' are the green beans, tuna, tomatoes, boiled eggs and olives.

They're lovely in the greek dish fasoulia (sometimes made more meanly with tinned butter beans).
Essentially soften some onions and garlic in a little olive oil, add the beans, some tinned tomatoes, oregano and perhaps a little stock. Simmer til the beans are tender and the sauce thickened.
Lush on their own with crusty bread, or an accomanyment to grilled meats.

Saute them in a little olive oil with grated garlic...tastes yum and no vampires will come anywhere near!0

We just love them served as a veg! I got two packs greatly reduced in Tesco last week.
Cut into short lengths, blanched for 2 mins, drained, dried and frozen in 4 small freezer bags with two portions in each.
Sometimes I add them to a cottage pie with carrots and onions - or any other savoury meat/stew type dish.0
