baking without eggs or marg

Thursday evening is baking evening, I like to make cakes/breads for pack-up on friday and snacks for the weekend. Unfortunately I've hit the end of the week with no eggs or marg.

I have

flour
oil
cereals (weetabix, cheerios, special K)
milk
bread to be used up
dried fruit (sultans,currants, apricots, cranberries)
syrup (golden and maple)
oats (but I did flapjacks on tuesday)

and probably other bits that dont immediately spring to mind.

Any ideas? I get the shakes if I dont bake :rotfl:I have a bread machine that can be pressed into action

What about a nice spicy fruit tea loaf in the BM? You could probably do scones with oil instead of marg, could do muffins without egg I imagine, have you got any table spread of any sort that you could bake with?

unfortunately just a scraping of marg and thats it :( didnt get my big shop done this week which was good for my bank balance but the fridge is looking distinctly mother hubbard :rotfl:

wasnt sure about muffins, i assumed they needed an egg to make them "puff up"

fruit tea loaf a good idea - I shall go and have a hunt ....

Weetabix cake springs to mind. If you do a forum search, there's weetabix brownies, too.

I love the look of weetabix cake, I do love things that are a bit different. I did have a recipe similar to this, but it needed an egg.

will definitely try this one, get the children to crush the weetabix b4 they go to bed

A Molly Cake doesn't have eggs, fat or sugar in. I make it for my diabetic MIL. I'm sure you could substitue other dried fruits for dates if you haven't got any and plain flour for wholemeal. Ground almonds might be a prob though:think: . Hope this helps.

The raising agent in the flour would make them 'puff'. will go and do a little search for you, I haven't got the energy to do anything else. I didn't shop last Sunday, so am having the same probs. Have made a menuplan largely from what is in, MIL or dh can get a couple of things that are desperate.

    back soon

http://www.recipezaar.com/137725 you can try this site for filtering recipes...the one here uses peanut butter for the fat. You could do baked peanut butter cookies.

the no-bake PB cookies look interesting, I dont have any wheatgerm, but I found a suggestion to wooze oats until a similar consistency

    great suggestions from everyone, thanks
