    Sorry for the delay here it is :D...

    225g softened butter
    140g caster sugar
    1 lightly beaten egg yolk
    280g plain flour
    1 tsp almond/vanilla extract
    pinch salt

    Mix the butter and sugar with a wooden spoon, beat in the egg yolk and the almond/vanilla extract. Sift the flour and salt into the mixture and stir (or gets your hands in there) until it's thoroughly combined.

    Halve the dough, wrap in clingfilm or zippy bag and put in the fridge for 30-60 minutes. I roll it out between baking paper as I don't like adding extra flour, whichever way works for you. If it too hard, squish in your hands a little until the heat from your hands melts the butter a tad.

    Roll and cut or mould and bake at 190 degree C for 10-12 minutes. Until golden brown. Let cool for 10 mins and then carefully transfer to a wire rack.

    I got the cutter from John Lewis in a bundle, there were about 8 different shapes, I think it cost £4.

    The icing was just icing sugar and water, with colour added, made it very thick and spread it on but then realised it was easier to pipe.

    The chocolate chip one was the same recipe with chips added, the amount of mix above made all of the cookies.
