I've never used fresh yeast before but for 3 lb of flour I would use one and a half pints of water . Check your recipe, are you sure it doesn't specify more water, but using half a pint to cream the yeast first ?

Just keep going - add some more water slowly and keep kneading. There's a point in breadmaking where it looks a real mess, and you've got a bowlful of stuff that's not mixing and it looks like it'll never be right. This is usually the point where you're covered in it, you get an itchy nose and the doorbell rings :)

But keep kneading - try adding up to another pint of warm water, splash it in bit by bit, but don't stress, if you add too much you can always whack in a bit more flour. Good luck!
