You can certainly use the golden syrup - I often do that if I'm worried about something binding well.

Don't tend to do measurements though, I'm afraid - just kind of dollop a load in!

how much honey per oz of sugar

I tend to use sugar and honey in same quantities on a volume basis - i.e. substitute each tablespoon of sugar for a tablespoon of honey. Or in American recipes say 1/2 cup of honey for 1/2 cup of sugar. I have never done it by weight though, although my guess is this would also be pretty much the same.

    Hi,

I've just checked my meal plan for tomorrow and have got jam roly poly for pud but have no sugar left. Does anyone know if I can I replace it with honey in a cake mix and still have an edible sponge?

    Thanks x

Sugar free baking - mainly about using sweetener but there is other discussion and recipes as well so you may be able to make something else?
