Breville BM help needed

A friend has lent me a Breville Compact BM, but with no manual or recipes. This was the only one I could find on the Internet:

French Loaf
400ml very warm water
540g strong plain flour
60g plain flour
1.5tsp salt
2tp white sugar
1.5tsp dry yeast placed in well in flour, not deep enough to hit water.

BM was set to French, medium crust and large size (1kg) loaf. While it looked okay, once cut into it was soggy and tasteless.

Can anyone give me any tips on how to improve please? I like the sound of the French loaf - not least because of the minimal ingredients needed - but any recipes/tips would be gratefully received.

    I'm not familiar with this breadmaker at all but if it was soggy I would think it maybe needs less water (?). Thats a guess.

    If you go to the breville website ....breville.com and click on 'cooking' you should be able to find the model of breadmaker and then you can download the manual from the site. I did this for a pie maker I was given on freecycle. HTH

    Thanks Otterspasm. I have tried the Breville website, but can only see one BM listed (not this one) and no links to manuals.

    I have another loaf on the go now, with 50ml less water. If that doesn't work, I think I'll give up.

    Have just had a bit of a look at the breville site....sorry no luck with finding breadmaker but you could try emailing their customer service dept and asking how to get hold of a copy of the manual. It makes such a difference if you have the right recipes!

    Thanks Tess. There's no model number that I can see, it just says that it's a 'Breville Compact Breadmaker Oven'.

    Second loaf came out less soggy, but still fairly stodgy and tasteless. I'll try emailing as you suggest - but am seriously thinking of buying the Panasonic!!

    I can't say I blame you really:rolleyes:.
    I have a morphy richards fastbake and without realising it I was using the wrong manual for 2 years....doh! I have the right one now and the bread is better, it wasn't awful before but it does make a massive difference having the right recipes.
    I would recommend an MR fastbake. Mine is used very often and is pretty reliable (although when it dies I do fancy having a panasonic!)

    Why not just buy the ready mixed ingredients for a while, just add water and away you go. I know Lidl do several, and I'm sure Asda and so on will do as well. May not be the ultimate in taste and texture, but we use them a lot, and they are pretty good. Saves a lot of hassle.

    My MIL lent me an old Breville BM (dont think it was a compact) and each loaf came out rubbish - either ok on bottom and doughy on top or ok on top and burnt on bottom. Ordered a panasonic but had to wait a bit for it to arrive as they were all out of stock so just made dough in BM and baked them in oven as rolls. PAnasonic now here and loaves are much better. My advice would be to ditch the machine - didnt have much successs with the one i used!!

    Thanks all for your help, and thank you to pipkin71 on "I love my Panasonic BM" thread for her link to a gumtree posting - I have an unused Panasonic SD254 waiting for me to collect at the weekend. The Breville will be going back to my friend, who never uses it - now I know why ;)
