Help!meal for the inlaws please?

hi wonderin if anyone could help me i have the inlaws comin round for dinner tonight i need a recipe somethin i can do with chicken as i have got some out the freezer that i cant burn or mess up as this is the first time they have been round and his dad used to be a chef and his mum will judge me on it too! so please can someone help im so worried! thanks ash

    is it a whole chicken, pieces - skinned or not? If it's in pieces, u can't go wrong with pan-fried chicken in a garlic, wine and mushroom sauce, finished with cream - u can do similar as a casserole too (please excuse the u instead of the letter after x - keeboards and coffee don't mix!)

    Do they like spicy food? Fajitas are quite easy (I buy a packet mix for the spices.)

    I use onion, red peppers, sliced chicken, cooked up in a packet mix, and wrapped up in tortilla wraps. Best to let people wrap their own.

    We serve with nachos (tortilla chips, salsa, guacamole, sour cream, and grated cheese.)

    don't do recipes - sorri - just descriptions - t i soften some garlic and fine-chopped onion in a mixture of butter and olive oil, put to one side, reheat pan and gentli fri the chicken fillets on both sides til nearli cooked. I add the salt and fresh-ground pepper at this point. add the garlic and onion, then pour in some white wine, bubble for a while, til slightli reduced add sliced/halved button mushrooms. when chicken is all cooked through add double cream and thime (no letter after x remember!), cook till warmed through and ur done. u can get it to the adding of the wine and mushroom stage and reheat later if u like. Sometimes I add grain mustard with the cream. If u want it a bit quicker u can cut the chicken pieces across the grain into goujonish sizes. I serve with little roasties and wilted spinach, or broccoli. nice with rice but can look a bit colourless

    I usually marinate my chicken in Garlic and olive oil, then grill turning once or twice or if i haven't got much time to stand over them i cooked in foil then grill them at the end. Serve with New potatoes, chateney carrots and garden peas. With a white sauce or bread sauce at the side. Usually have it with a glass of nice white wine.

    Forgot to add apple pie and custard for afters, always goes down a treat or home made rice pudding.
    You can touch the dust but please don't write in it !

    Not sure if you've done it now but I would stuff the fillet with some pate, or mushroom mixture (with mustard, worcester sauce, breadcrumbs, cream) and wrap with bacon (streaky less than a quid), wrap individually in tinfoil and cook for about 25 mins. I'd serve with either roast or mashed potatoes. Boy, am I hungry

    How about stuffing the chicken with black pudding or haggis wrapping in foil and baking in oven and serving with a peppercorn suace, broccoli carrots and baby potatoes? Lovely!!!

    Jerk Chicken? You can buy a ready spice that lasts ages - shake spice onto the chicken as you cook it in pan with abit of olive oil. Does matter if you do 'over colour' it as it will add to the effect )

    Serve with roasted sweet potatos and peppers, or with boiled rice with peas, onions, and mushrooms tossed through it and little nob of butter.
