I have decided to give homemeade bread a go. I bought a breadmaker last year but wasn't impressed with the results. I want to try handmaking it and baking it in the oven but there are so many recipes around. I want to make a basic white loaf or bread rolls that can be used for sandwiches so don't want anything flavoured.
Any tips/advice/recommended recipes would be greatly appreciated!

I would just try out one of the receipes you find to see what works for you. I've tried making bread and bread rolls before and it just turns out rock hard.
I honestly do think that bread is something you either can do or can not do, even if you follow the receipe exactly.

Hello! Could any of you lovely people help please? Attempting bread for the first time today (sultana and cinnamon) and I've just realise I don't have any loaf tins

Do you need it loaf shaped?
When I make bread I just put it on a baking tray.0 -
I don't suppose the shape really matters, it's just for the family to scoff. I didn't know if it needed "support" as it cooked?0

I often don't bother with a tin I just shape into smooth oval , stick it on a floured baking tray and put it in the oven , it makes a lovely rustic loaf0

You could use a round or square cake tin of similar volume.
If you do bake freeform then the loaf will spread out a bit more but you counteract it by shaping into a ball and pulling down the top/sides and tucking under the base to create tension in the dough surface. There are some good videos on youtube showing the technique.0 -

A bit late to the party, as usual, but I'd just like to say that my first "freeform" loaf looked like a cowpat but tasted fine.If you fold it in half, will an Audi A4 fit in a Citroen C5?
