Suggestions for parmesan

Hello

I have some leftover parmesan which is due to go out of date soon and hoping for suggestions on how to use up! I have a couple of eggs and flour etc so was thinking cheese straws or something? Does anyone have any recipes?

    Parmesan doesn't really go out of date - I generally have a lump in the fridge and as long as it's not obviously mouldy it's fine. Let's face it, it's pretty old once it gets to you lol, I don't think it'll kill you if you leave it a couple of weeks longer!

    Failing that you could make some parmesan wafers - they're dead easy and all you need is cheese, flour and pepper :) Or these just need the cheese :)

    I finely grate any leftover cheese with left over bits of bread in the processor then put them in a bag in the freezer, then I have a quick topping for pasta bakes, baked gratins that type of thing to use straight from the freezer.

    beat me to it ;) You'll know when it's had it. Alternatively grate it all and freeze in a tub -use straight from frozen.

    grate it finely, and put in little bundles on a piece of that non stick baking parchment, place into a very hot oven for about 6 minutes - then you will have delicious golden parmesan crisps - a fab garnish for salads, pate, soup, etc, my Head Chef used to make these in the hotel I managed - absolutely delicious!
