HI everyone!
I decided to go for the Panasonic icecream maker (while cheap on Amazon) to hopefully satisfy the icecream requirements of my 2 kids. So far I've made strawberry (went a bit wrong cos I didn't cool the custard before I put the cream in.. but still tasted ok) and chocolate (omg, how lovely was THAT
!!) .
I don't tend to buy cream as either disappears (my husband says he doesn't like it but it still disappears) or it goes off quickly, so I'm hoping that someone can share some wisdom about creamless icecream making? If it works?
I have a SHED load of tinned coconut milk (from offer at local farm shop) and would be interested to know if I can use this in icecream, maybe instead of cream. I'm not up on the science of it all and so I'm hoping someone can fill me in on it

You can use canned custard to make ice cream.Never tried it but it was in the recipe book that came with my ice cream maker.By the way you can freeze cream so it neednt go off

I think coconut milk would work well, this looks yummy.
I make ice cream without the custard as I have an egg-allergic child. I tend to mix pureed fruit with sugar and then cream or yogurt and just chuck it in the machine. i never follow a recipe.
Ok, I've just realised that the recipe I posted above doesn't require an ice-cream maker!
I'd make it by mashing the bananas and combining with the other ingredients and putting it in the machine to churn.0 -
I've just seen a recipe for lemon curd ice cream on the jamie oliver under a fiver thread. It looks delicious. Uses a tin of custard, 500g of greek yogurt and 1/3 jar of lemon curd.
You can just freeze yoghurts in the ice cream maker too. I tend to keep the little square cartons of UHT cream in stock, which do not need refrigerating and taste just as good if you want to quickly whip up some ice cream.

Ooh, thanks everyone! I think yogurt based ones are the way to go for me as I'm SUPPOSED to be cutting down to shift the baby weight (the 'baby' is 18months now, lol!).. we always have yogurt in for the kids too, I'll make us one lot with low fat stuff (booo!) and them their full fat ones though.
I'll be trying the coconut ones, too. My mum is a cocunut anything addict and it's her birthday soon, so I reckon there's a special carton of coconut icecream with her name on it : )
I have one on the go with some of those Rocky chocolate caramel bars chopped up and a full tube of Smarties. Is it right that freezing chocolate removes the calories...?
