hello,
I was wanting to make a soup and i dont have a stock cube, plenty of veg and potatoes etc...also dont want to use meat can i do this or will it come out funny?? apologies for the daft question but im a newbie...to this, and cooking!! any help would be fab.

I use Marmite, dissolved in boiling water, if I am out of stock. Or you can make a stock by boiling up your veg. I am veggie so never use meat. Hope all works out okay.0

A glug of alchol can sometimes help give it a bit of body - wine, brandy, sherry. The alchol cooks off, so don't worry if you have little ones.

Hi vixter,
Normally I melt a little butter, add the veg and allow them to sweat over a low heat for about 20 minutes, then add the stock or water or whatever you are using and season. Simmer until all the veg are cooked through. If you have a hand blender you can use it to make a smooth soup or just enjoy it as it is.
