quick cake help please!

i wanted to bake a cake for this afternoon, pref. something into a loaf tin so it can be sliced easier. was thinking of a basic sponge, but adding things - could i add coffee?
i have no icing sugar at the mo, so that stops a lot of things.. any ideas for easy cakes i could do?

Hi ther, just saw you're help, If you use a basic 2 egg sponge and if you've got a lemon. grate lemon rind into sponge & bake, mix lemon juice with a couple of spoonfuls of sugar & warm slowly until sugar melts. when cake cooked pour syup over it whilst still hot in tin. YUMMM.
Or you could add dessicated coconut.
You could add coffee dissolve a heaped teaspoon in a little hot water and add to sponge mix.0 -
You could use orange? Walnuts are good in a coffee cake
Or, this simple, egless fatless fruit cake is lush in a loaf tin:
(cup size doesn't matter, its not a precise recipe. I use a coffee mug)
2 cups flour (SF or plain, doesn't matter, just affects the texture. if you like a dense cake use plain)
1 scant cup of sugar
1 cup dried fruit
2 teaspoons mixed spice
you can add extra cinnamon and ginger if you like. And orange rind is good too
1 cup milk (not exact, you may need more)
Mix all the dry ingredients together, mix in the milk to make a reasonably cake-mixy consistency. Pour into a greased loaf tin and bake at 160oC until a knife comes out clean

Yes you can add coffee. Just make sure you dilute it first.
You can add pretty much anything to the mix and then bake it. You have to be careful with heavy ingredients like choc chips, nuts, etc as they can all fall to the bottom. What I do in these cases is pour half the mixture in the mould, and mix additional ingredients into the other half, THEN pour it in and bake.
