Evening everyone,
I cooked muffins today, two types, Lemon and Poppyseed (YUM) and banana muffins. They are SOOOOoooooo easy to make!
Now these both taste absolutely fab but half of the muffin is sticking to the case. This is really bad with the banana ones.
I followed the recipe correctly and dont know how to fix this, any ideas?

Maybe it's your paper cases? I'd try another brand, see what happens.
You could also try brushing some oil on to the cases.0 -
I always found this to be a problem - especially with moist sticky choc-banana muffins. My solution is to use silicon bakeware and do away with the paper cases!2009 winnings: private box at the ballet, a cooking lesson with Jean Christophe Novelli, a case of wine, £25 itunes downloads, a candle, Football Manager PC game, a lipstick, £2500

And have you found that this totally eliminates the sticking? Do you brush with oil?
:-)
Thanks

Yes - no oil and no sticking. They always pop out perfectly.

Thanks, I think i'll try and get some reasonably priced ones. I checked on ebay and they are not cheap!!!

I agree - paper cases are completely unnecessary. Actually, I think they might even change the taste of the muffin. In New Zealand and Australia, where muffins are made all the time, we just use a metal muffin tray. Mine is an ordinary non-stick one - I found it at Morrisons, I think. Muffins contain quite a bit of fat in the mix, so they don't usually stick in non-stick tins. The flexible silicon stuff was not so successful in my experience.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000

Home and Bargains do silicon bakeware very cheaply, I'll check out the H&B thread for price. Ppl have rated them quite highly. Mine are from Argos when they had a 6 piece set for about £7 (I think), although 1 piece was a small metal tray (silicon would be too wobbly to use).
I'm still experimenting with my silicon bakeware. If I'm impatient I completely ruin everything (but I so want to eat when still warm from oven!), so I think the trick is to leave muffins to cool down completely before taking them out (or am I missing something?).
EDIT: poster on H&B thread says silicon muffin tray going for £1.99. Also try TKMakk. HTH!0
