need inspiration please!!!

I am probably going to make this sound more complicated than it is.....i need help with meal planning for 4 evenings of the week as i am at work. i would like to be able to make a meal that the kids can have a tt time and we can heat up when i get home at 7/7.30pm oops! forgot to mention oh can't cook:eek: am doing all o/s cooking saturday thru to monday and am baking like mad all that is fine it just my head is spinning trying to work out how and what to do especially with summer coming! :rolleyes:

any help gratefully received:D

    not very summery I know but things like stews, casseroles and lasagne, bolognase sauce can easily be served up and reheated for you later on.

    Or what about grilling some chicken when the kids eat ([EMAIL="I@m"]I'm[/EMAIL] sure your OH could do that) with a salad and you have your chicken cold as a salad when you get in?

    pasta sauces can be reheated, but would recommend cooking new pasta for yourself when you want to eat. Although pasta bakes could be heated up.

    a simple fish pie could be reheated too.

    Just make sure you reheat things all the way through - otherwise your MSE and OS ways will backfire :D Hope that's of some help.

    Anything in the slow cooker! Make it in the morning and turn on. It will be ready for the kids at tea time. Dish up what they want, stick the lid back on and it'll still be hot for you later.

    It's really easy - honest! Just cook a mince and tomato bolognaise sauce (I often add muschrooms, peas, sweetcorn into it too) then layer of sauce/layer of lasagna sheets/layer of sauce etc till the top, then layer of white sauce (but I cheat and use Bisto white sauce mix) then add grated cheese on top. Then cook in the oven for about 20 minutes (or a bit longer if it's been chilled/frozen beforehand).

    I often make one up and then freeze it (without baking in the oven first).

    Serve with a salad (especially if veg is in with the lasagna) or with frozen cooked veg.

    oh - here's some inspiration (your post has been at the back of my mind all afternoon!) What about burritos - make a filling of your choice mince/chicken/ beans/ veg and wrap up in soft tortillas, place in an oven dish (or two dishes in your case) and pour over some tomato sauce (tinned toms with some onion and garlic) and top with cheese. Bung in the oven and serve with rice or salad :D

    I am sure you could find a better recipe somewhere but that's the jist of it :D

    lasagne sounds quite easy so will give that a go, burritos sound yummy will also have a go at that, think i will just have to write instructions for oven temp and times then it can be ready for when i get home:D Also lasagne/cottage pie could put in oven before i set off for work i don't leave til after i've done school run

    Dont forget you can vary the main ingredient of stews etc to make further changes to the slow cooker repetoire!
    for instance:
    Beef stew
    Lamb stew - with a couple of teaspoons of mint sauce added
    Chicken stew
    Chicken broth
    Pork casserole
    Pork in cider
    Chicken in red wine
    beef in red wine lol
    Lamb in red wine with rosemary
    Sausages casserole
    Chicken in honey & mustard - lovely with either potatoes or pasta
    Bacon broth would probably be nice but never tried it...
    Cauliflower cheese
    cassolat (sp) =bean stew lol

    & you can even slow cook a really mild curry for the kids & then 'pep' it up a bit for the adults later
    I THINK is a whole sentence, not a replacement for I Know
