Chinese plum sauce

Hi, does anyone have a recipe for Chinese style plum sauce? I have loads of plums in the freezer from last year and OH loves Chinese food.

Thanks

I usually make this by roasting the plums under a duck legs marinated in soy sauce, five spice, star anise, chillies and cinammon. You could adapt it by cooking the plums slowly with the same spices and a lot of soy suace and some chillies. You'd need to sieve the result and possibly water it down a bit - the duck fat tends to combine with it to give a sauce but if you cook it in a pan i'd guess it would need a bit more liquid.

Edit - forgot to say you'll also need to add brown sugar to taste - the result tends to be quite sharp.
