Tomorrow I'm running a cookery sessions, we were meant to be making pizza's and a dessert but the venue has just rung to inform me that the kitchen has been double booked and we can't get in!
I've got another venue but need some idea's for no cook recipes - can anyone help? Both a light meal and a snack

leni - you will probably end up in salad territory....! How about a tabbouleh or couscous salad, where you can soak the grains in cold passata or tomato juice first, and then add other vegetables, herbs, olives etc...?"Remember that many of the things you have now you could once only dream of" - Epicurus0

Houmous? Most dips are non-cook and would cover the snack aspect.
Things like syllabub, and trifle don't need cooking either - just assembly.
Otherwise i'd agree with the salad thing - or gazpacho or a similair iced soup.

Not really a light meal or snack, but the best I've got ...
FRESH RED SALSA
Enough for a large bag of tortilla chips
INGREDIENTS
Small pack of fresh coriander
1 green chilli*
1 clove of garlic
½ a red pepper*
½ an onion
2 tomatoes
1 tablespoon of olive oil
A pinch of salt
METHOD
Wash the coriander and shake dry. Cut the top off the chilli, cut it in half and scrape out the seeds. Peel the garlic. Cut the ends off the pepper, remove the middle bit with the seeds and cut it in half. Use half and save the other half. Peel the onion and cut it in half. Use half and save the other half.
If you don’t have a food processor, chop the chillies, coriander, garlic, pepper and onion into tiny pieces. Chop the tomatoes into 5mm (¼ inch) pieces. Put all of the ingredients into a bowl and mix together.
If you have a food processor, coarsely chop the vegetables. Put all of the ingredients into it and process for 1 minute.
Leave for 30 minutes for the flavours to mix.
FRESH CHILLI WARNING!
When you chop up the chillies be careful and avoid getting juice on your hands. If you touch your eyes, mouth or other ‘sensitive areas’, even an hour after chopping them, they will smart and burn. So wash your hands or wear rubber gloves.
* The colours of these ingredients are important to the appearance of the dish. If you use a red chilli and/or a green pepper, the dish will taste the same but not look the same. The acquisition of wealth is no longer the driving force in my life.0 -

A "no cook" dessert ...
200g of dark chocolate
300ml (1 medium carton) of single cream
1 egg
1 drop of vanilla essence
A pinch of salt
Ideally, use the top rated 70% or even 85% cocoa cooking chocolate. You can use dark eating chocolate, but check to see if it has had vanilla added already. The vanilla essence is essence, not extract or flavouring.
Break up the chocolate into pieces and put in the bowl. Gently warm the cream to boiling point. Pour over the chocolate and leave for 5 minutes for the chocolate to melt. Crack the egg into a cup and pick out any bits of shell. Add the egg, vanilla essence and salt to the chocolate and cream. Mix with the fork until smooth. Pour into cups, glasses or ramekins. The quantities specified should make 4 servings. Cool in the 'fridge for three to four hours.
If you really want to "go for broke", and if you have any, put a teaspoon of Cointreau on top. Keep a square of the chocolate and grate it onto the top. Get a big carton of cream and serve with the remainder of the cream, lightly whipped.
PS. Oops! I've just noticed that you've got to warm up the cream to melt the chocolate! The acquisition of wealth is no longer the driving force in my life.0 -
You have 2 possibilities here:
1. I went to a cookery course where it was all done on one of those mini gas camping stoves (the type with cylindrical gas cylinders). She paid £10 for this I gather. It was an Indian cookery course.
2. Raw food challenge:
