Sticky toffee puding with butterscotch

Hi,

I went away at the weekend and had a pub lunch. The pudding was Sticky toffee pudding with butterscotch sauce. It was divine.

Does anybody have a recipe for this and also can it be frozen? There are only two of us.

    Hi, i make one by gary rhodes and bake it in a rectangular tin,cut it into squares and pour over butterscotch sauce that i make.

    You could freeze what you don't want in portions along with the remaining sauce in small cartons,then just defrost and zap in microwave for little.
    Serve with vanilla ice cream for me!

    My kids do like the cake as it is with no sauce as well!

    yes that is the one,my recipe is in grams not cups though and i make my butterscotch sauce different.

    I use butter,soft brown sugar,(50g about of each) melt together and let it bubble for a min or 2, add a tin of evaporated milk,boil for a min or two and for the sugar to dissolve again and thicken with a small amount of cornflour.

    Thanks. I will give it a try at the weekend. Do you think it would all freeze in portions for the microwave. The recipe makes too much for us.

    Bongedone - somebody else on this Forum suggested a while ago to bake the sticky toffee pudding mixture in a muffin tin for 1-person portions, then freeze. I have done this, and it works a treat! Just give them a few minutes in the microwave from frozen. I have a bag of them in the freezer even now. We are also two-only, and with many desserts you tend to make them and have to eat them all week, so they lose their appeal. One-person solutions like this one are definitely the answer.

    yes can't see why not, as already suggested,keep sauce and puddings separate though as sauce will take longer to reheat i would have thought.

  • Hello im sure read somewhere on here about making muffin sized toffee puddings, sounded a really good idea and as useual i didnt write or copy the recepy there and then and now cant find it anywhere!! does anybody know how to make this?? they were also ok to then put in the freezer....unless im just making things up :p
