Sunflower seeds gone green??!!

I made some muesli bar things yesterday that needed baking in the oven and I have cut them up and put them in an airtight box in the fridge and the sunflowers seeds have gone green!! Still taste nice though!

Ok - google books found a scientific journal with an article on food processing that says
'it (sunflower seeds) turn off colour, generally to green or brown, during processing. These off-colours are caused by the reaction of chlorenic acid at high pH values'
It doesn't say this is harmful - just that people don't like it so its impractical for food production. Not sure this is any more helpful really.April Grocery Challenge: £250/£127.530
