Burger Van Food Advice Please!!

Hi,
Me and my Friend now own a burger van and have been taking it to a local car boot. We are finding it hard to judge the amount we need to take each week as we have to defrost the food the day before.
Does anyone else run a van and do you do the same? of do you cook from frozen? As we are new to all this and finding our feet any advice would be very welcome.

    Well iv never owned a burger van, but i did one work in a "greasy spoon" cafe and they cooked all their burgers & sasages from frozen. What type of food do you defrost the night before?

    we defrost bacon, beef burgers, and sausages.. As we are cooking on a griddle we thought it would have to be defrosted before hand.

  • hmm... they deep fried all their food, they didnt have a griddle :rolleyes: .. well it seems i wasnt much use ,,sorry :( ..... although i do remember the burgers that they bought from the cash & carry did say on the side "can be cooked from frozen" ... perhaps you could visit a carboot sale/event and watch the other burger vans or ask them.
