Easy Birthday Cake Recipe?

It's my little girls' first birthday on Birthday and I wanted to make her a cake - does anyone have any simple, easy, bulletproof recipes for a cake plus icing?

    Quantities depend on the size of tin(s) you have.

    I just make a 2 basic sponges then add jam and whipped cream to the middle. Just follow a Victoria sandwich recipe.

    Make some butter icing, soften it by warming then smear it all over the cake to smoothen it out and make the rolled out icing stick to it.

    Leave it to set then decorate.

  • It's my other half birthday today, and the kids want to make him a cake. I need a recipe for a basic sponge cake and I want to fill it will jam and cream. I have got eggs, flour (plain and self - raising not sure which i need), and margarine. I have looked for a recipe and they seem to complicated and don't have time or money to get extra ingridients. I will need to buy some sort of cream for the filling though, but what sort do i need? Sorry for being clueless...

    Easiest sponge cake ever for me is a plain Victoria Sponge which you can quite happily make with the ingredients you have. Sorry about the imperial measurements but I don't 'do' metric in the kitchen!!!

    4 oz sugar (caster is best but granulated works fine too - honest it does)
    4 oz SR flour
    4 oz butter/marge
    2 eggs

    Cream the butter and sugar, sift in flour, add eggs bit by bit stirring well so they don't split the mixture. Makes enough for two 6 inch shallow sandwich tins, remember to grease them well with marge and line the bottoms with grease proof paper otherwise it may be a bit tricky to get them to release. Bake for approx 20 mins at 180/Gas 4, or until golden. Worth using a knife to make sure they are cooked in the middle as it doesn't ruin the look of the cake.

    Leave to cool on a wire rack. Sandwich them together and you can fill this with jam, whipped cream, lemon curd - any filling of your choice really. Personally I like lemon curd and then whip up a bit of buttercream - marge and icing sugar - for the top but a sprinkling of icing sugar works too. I can make this cake with my eyes closed, it's soooo easy.

    You can make it chocolate by taking out 1oz of flour and replacing with cocoa powder, it will be slightly denser. Add cocoa to buttercream for chocolate buttercream, vary the amount to taste.

    HTH, I am a bit of a bash in the kitchen but have few disasters and am especially lucky at baking, so this is one of my favourites and can be done in about an hour if I'm in a hurry.

    It is easy but you will have to look at the ingredients to see if you need any extras.
