Turning lamb into minted lamb???

Ive just been to a local meat farm shop that i found on bigbarn. Ive brought some nice free range, non hormoned lean lamb chops.

I want to cook them for dinner, but
1. I want them minted
2. Whats the best way to cook them.

Any ideas?
Thanks

I want mine with causlaw (spelly) so gravy aint an option. I want to mint it before i cook it. Do I leave it to soak in mint sauce for an hour or so?

Yeah i'd say probably stick it in a plastic bag and pour in your sauce and bung it in the fridge for as long as you can (over night if poss)
