HELP HELP :( cake flat :(

Its my sons birthday today so decided to follow the be ro birthday gateu recipe, making as a victoria sandwhich

It didn't rise at all :(

So i attempted again using a different recipe

2 7" (18cm) sponge tins about 1" deep, lightly greased and covered in buttered greaseproof paper
4 oz (110g) self raising flour (sifted)
1 teaspoon baking powder
4 oz (110g) of butter or margerine at room temperature
4 oz (110g) caster sugar
2 large eggs
2-3 drops of vanilla essence


Again didn't rise :(

My oven is a basic electric, no fan assist or anything.

What could i be doing wrong ?

BTW i'm adding the entire mixture all together to make a bigger cake. Well bigger if it ever rises :)

    I would split mixture if I were you.....then it is easier to check if it is cooked etc.....
    Does oven seem hot enough???? Try knocking temp up a fraction but reduce checking time......HTH ;) good luck

    Yes oven seemed hot enough. I didn't really want to make a victoria sandwhich but just the sponge we could ice over before he gets in at 3pm. BUts its not working at all well :(

    I can use them by making them into small cakes with icing on but still need to make that birthday cake :(

    hi dan what did you mean you added it all together did you put it in both the tins ?
  • Maybe try mixing it longer to get more air in it.(that's what I'd do)
    Also to check it's cooked lightly press the top - it should spring back up.
    Or push a knife in the middle it will come out clean if cooked.
    Good luck, I'm sure it will taste great whatever it looks like.

    Making it in one tin shouldnt make any difference, i often do this & they always turn out fine. Make sure you mix the butter & suger well. Fold in the flour carefully, so you dont knock air out that youve put in by beating the sugar & butter. & try not to open the oven door while its cooking.
  • I had a disaster with this recipe for Dh birthday cake too - I ended up cutting 4 circles out of the flat sponge and jaming them together to create a 4 story cake:rotfl:

    I beat the hell out of it :) It could be the oven mind as we always have issues with things not rising (its a cheapo electric)

    Now thats not a bad idea :) I may do that with the remains of the last 2. I have to confess i've been, erm, well, sampling the damage :eek:

    although it hasn't risen it tastes brill :)

    I doubled the recipe too to make sure. Has risen although not as I would have expected. Oh well he'll end up with something :)

    The jam tarts i cooked for him came out perfect at least :)
