boneless leg of lamb goes on the BBQ in our house. Open it out a bit more so that it's flattish - all the same thickness or as near as you can get it. Poke holes with a sharp knife & push garlic & rosemary into the holes. Smear with oil. Cook on BBQ for 40 mins-ish depending on how rare you like your meat! Instead of the BBQ you cn cook it directly on the oven shelf, but put a tin underneath to catch the fat. Really hot oven required.0

Make small slits all over the lamb and insert small slivers of garlic. If you have some, rest it on a bed of fresh rosemary and roast.
30 mins on high (230 degrees) then reduce heat to 180 degrees and cook for 25 mins / per pound.
Don't forget to allow the meat to 'rest' before serving.

Rosemary and garlic - you need nothing else.
Don't go anywhere near it with mint sauce either! Bleuchhhhh!

Saw a Jamie Oliver program once who basically roasted the lamb with rosemary and garlic, but didn't use a tray in the oven, just placed it on the rack with roasting spuds and veg underneath to catch all of the juices Mmmmm :drool:0

thank you everyboday. I went for leg of lamb cooked with garlic and rosemary from the garden. Did some apricot and orange HM stuffing but cooked it seperate. LOvely!0

My first time cooking a piece of lamb in the oven. What herbs should I put on it? I only have mixed herbs in the cupboard, but am trying to up my stocks. Is it rosemary that you're supposed to put on lamb?Pink Sproglettes born 2008 and 2010

Hi Pollyanna, You're spot on with the rosemary. Also mint gives a lovely flavour to the lamb. You have to be careful with your cooking times as lamb is better pink in the middle.I would check the weight and a cookery book to get it just right. shrewdal0 -
I like Rosemary and garlic on lamb. I use fresh rosemary from garden and peel couple of cloves of garlic .0
