I've done a quick search, but found conflicting advice. I'm roasting some squash to make soup - I normally peel it, but have left skin on today.
Is the skin ok to eat?
Thanks in advance

When I roast squash, I leave the skin on as I find it easier to remove from cooked than raw squash.
I would think that the skin won't harm you, but I think the texture will be too firm to it to be good to eat.

I don't think it is. I wouldn't eat it anyway. I sometimes roast in the skin but eat out of it if you get my meaning.0

thanks for your quick replies - into the compost bin, then0

I roast it in wedges and leave the skin on and eat it. I don't find it too tough at all, barely notice it. My OH leaves the skin though - so entirely a personal choice. It is only from watching Jamie cook it that I would have ever thought of leaving the skin on though. But I think it depends on the dish too - I would deffo peel it for a risotto or stew.2015 wins: Jan: Leeds Castle tickets; Feb: Kindle Fire, Years supply Ricola March: £50 Sports Direct voucher April: DSLR camera June: £500 Bingo July: £50 co-op voucher0

Like JoJoB I used to peel, but since seeing Jamie do not. If you are liquidising the soup then you can get away with the skin on any sort of squash (obviously, wash before cooking!) but even if eating in chunks then butternut skin is fine and all but the thickest and toughest of other varieties are pleasant to eat as well.0

I eat the skin on a roasted squash, if you roast it long and low its actually tastes nice.
I eat it and there is nothing wrong with me :rotfl:0 -

well, you learn something new everyday! the skin is so tough when you're trying to peel the squash that i never thought it would get soft enough to eat.
Just what I was about to say :T Just when you think everything has been written about OS, along comes a thread that tells you something new. Thanks, all - saves me a job of peeling :A

I know, mad isn't it? Years I've been chucking the skin away, and it turns out to be no more indigestible or tough then that on a nice baked potato!0

ohh I love squash but hate all the faff preparing it - we usually have it with a roast dinner so theres a lot of veg prep (we usually have at least 5 veg lol)
Do you think you could roast it whole, maybe !!!!! the skin, or would the seeds etc turn it yuck?I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0
