    I have the same problem, have even tried following recipes word for word...I recently heard read two possible explanations (not sure if either is true) - one said it was symptomatic of the oven being too hot, the other said the mixture is too runny...

    Just to clarify...my comment was about fairy cake mountains...no idea about soggy cake cases, sorry niptuckfan!

    I do mine by hand and they do rise a bit but they're not fluffy - should I use an electric whisk?

    if the cakes are rising too high and splitting slightly its a sign that the oven is slightly too hot or that there is a bit too much mixture in the cases
    I often think about The Samuel Vimes 'Boots' Theory Of Socio-Economic Injustice. :cool:
  • The more air you get into your cake mix, the more mountainous the cake so maybe less enthusiastic mixing of the fairy cakes? the more times I open the oven door to take a look, the flatter my cakes come out - maybe you should just open the door a lot to achieve the pancake look?

    hi all,
    im gonna be cooking loads of fairy cakes soon, and wonder how do i stop them from peaking too much in middle, as i want to put icing on top which has to be flat to put an image on top of that. i weight eggs, then weight everything else same, i do add baking powder to self raising so i guess i should omit it. i also add a drop of milk to mix.

    would love some advice please xx

    I always add baking powder and milk too. That doesn't affect it but there are two things that can make them peak:
    • The way you put the mix in the cases: If you level off the mix once its in the cases, or dip it down slightly in the middle then they will rise evenly. ;)
    • The temperature: if you cook them too quickly at too high a temperature they will rise too quickly. I cook fairy cakes slowly at gas 5 for about 20 mins :) HTH

    Different recipes have different outcomes, which I know doesn't help you terribly much. Some naturally dome more, some are flatter.

    One way around it would be to level off the tops with a knife after they have cooled. You don't say how you are lpanning to put the image on, but if you are printing with edible ink, then simply use a buttercream mix to level out the cupcake, then use fondant (sugarpaste) on top as a flat round, cut out with a cookie cutter. You can put your edible ink image on top of that.
