Changing payment plan

Hello
I would like to thank all posters on this site as I have been given some great advise that has really helped me.
Could anyone give me some advise as to changing my payment plans? When contacting my creditors I was frightened into agreeing to a plan that I could ill afford. I would like to reduce this now as I am finding the repayments very difficult. One of my creditors said that once I had agreed to a plan that it could not be changed. Is this true?
Any advise would be extremely helpful.
