Vegetarian simple meal ideas

I have taken these meal suggestions from the 'path to freedom' people (website: http://urbanhomestead.org/journal/ ) as they have now archived old menu plans.
These were my favourites and thought I'd post them in case it may help anyone. I like the sound of them because it is just basic good real food full of vitamins and it is organic:
Soups
Creamed green soup (radish, kale, broccoli, celery, cress)
Winter squash soup with slice of sprouted bread
Pumpkin soup with scone
Eggs
Omelette with tomatoes, peppers, green onions, celery
Scrambled eggs with celery, tomatoes, and green onions topped with organic cheese with organic sprouted bread toast and fried green tomatoes with steamed asparagus
Pasta
Wholewheat organic pasta with tomato sauce (made with tomatoes, green onions, peppers, herbs) with salad
Organic macaroni & cheese topped with chopped peppers, tomatoes, squash
Aubergine, peppers and basil served with wholewheat pasta and Parmesan cheese
Tomato sauce (made with tomatoes, peppers, onions, herbs) and wholewheat spaghetti
Rosemary bread, wholewheat pasta with tomato sauce (tomatoes, peppers, green onions and herbs)
Squash, peppers and greens casserole made with organic pasta and topped with herbed bread crumbs
Vegetable lasagne made with eggplant, tomatoes, green onions, peppers and tomato sauce served with mixed salad greens
Spaghetti sauce (peppers, tomatoes, basil, oregano, green onions) with wholewheat spaghetti and tomato salad
Satay sauce with wholewheat organic noodles with peas, broccoli and daikon radish with sauce
Pizza
Herb pizza crust topped with tomato sauce (tomatoes, peppers, herbs and green onions) tomatoes, pea tendrils, green onions and roasted eggplant.
Pizza crust topped with tomatoes, broccoli, green onions and pea tendrils and mozzarella cheese
Rice Dishes
Wholewheat flour tortillas, with Spanish rice (tomatoes, green onions, peppers) topped with organic black beans, tomatoes, coriander and cheese
Organic curry rice, with squash, snow peas, daikon, broccoli
Snow peas, broccoli over organic brown rice with Lemon Herb Butter Sauce (chives, lemon thyme lemon and butter) served with sliced bread
Steamed greens, squash, peppers and herbs served over organic brown rice with cheese sauce
Vegetables (peppers, eggplant, squash, tomatoes) served over organic brown rice
“One dish meal” organic long grain rice with raw vegetables (corn, tomatoes) and steamed green beans served with lemon butter sauce made with chives, lemon thyme and lemons.
Gazpacho (made with cucumbers, herbs, celery, tomatoes) served over long grain organic brown rice
Sandwiches, Brushettas & Tostadas
Brushcetta topped with heirloom tomatoes, basil and chives served with tomato and cucumber salad
Grilled cheese sandwich (with tomatoes) on rosemary bread with salad and tomatoes
Tomato, avocado, raw cheese sandwich with tortilla chips topped with salsa (tomatoes, peppers, onions, coriander, lemon)
Corn tostadas topped with avocados, peppers, tomatoes, green onions, organic black beans served with salsa made with tomatoes, green onions, peppers, and coriander
